We,Malayalis  like unniappam by its unique shape and taste.It's a popular snack dish commonly prepared in Kerala. Unni means small and appam means rice cake.It is usually prepared from rice flour,jaggery and banana.It is well suited with evening tea or coffee and kids loves this small tasty dish.Uniappam is prepared in a traditional Unniappam pan or Unniappam chatti with small round kuzhi's.If you don't have this pan,don't worry you can simply drop a spoon(table spoon )full of batter into hot oil.You will definitely get unniappam but not in its round shape.I prepared this tasty snack for our potluck(friends get together) and everyone enjoyed this snack especially kids.Here is my gift recipe or gift  idea for mothers who can prepare this Unniappam as a thank you gift for your wonderful kids. So lets try out this recipe during this weekend and enjoy Mothers day with your kids and family.


     Unniappam

Ingredients Needed:
Rice flour - 250 g(2.5 cups)
Jaggery - 200 g(2 cups)
Banana - 2 nos.
Coconut flakes(Thenga kothu - 1 Tb sp)
Cardamom powder - 1/2 ts sp
Salt - a pinch
Oil - to fry
                                                  
                                                          Unniappam pan

Method:
1.Place jaggery in a pan and add 1/2 cup water,heat the mixture and make thick jaggery solution.Drain off and remove impurities and keep aside.
2.Fry coconut pieces in ghee.
3.Mash banana well in a blender.
4.Mix all ingredients except oil and form a thick batter.Keep aside for 2 hours.
5.Heat oil in unniappam pan and add batter into those kuzhi/pit with hot oil using a spoon.
6.Fry both sides.
7.Drain out into a container with tissue paper which absorbs excess oil.

Tips:
1.Use wheat flour instead of rice flour for getting soft unniappams.
2.No need of adding baking powder and baking soda,jaggery itself acts as a fermentor.
3.Use ripe banana with brown spots in skin.
4.If you are using rice flour,you can keep this Unniappam in an air tight container for 2- 3 weeks.
5.Fill 3/4 th of the pit with oil and add batter into the hot oil.


Enjoy this tasty Unniappam  with tea or coffee
