Beetroot Kichadi - Onam Kerala style
Kichadi is a yogurt based curry mainly prepared for Kerala sadhya recipes.We can use vegetables like ladies finger,fried/dried bitter gourd,beet root and fruits like pine apple.Usually vegetables are cooked with little water or fried in oil and simply add the plain curd.So simple...
Here i used beet root for preparing kichadi. Beet root is very rich nutrients and minerals which helps in blood formation and reduces anemia.It is very sweet and we can make wines and juices from beet root.This beet root kichadi is very simple and can be prepared within 15 minutes and it gives a special red/pink colour to the sadhya.
1.Beet root - 1 medium
3.Turmeric powder - 1/2 Tsp
4.Salt - to taste
5.Curd/Plain yogurt - 1 cup
6.Green Chillies 2-3
7.Dry Red Chillies 1-2
8.Curry Leaves - a few
9.Mustard - 1/2 Tsp
8.Oil - 2 Tb sp
1.Clean and peel the skin of beet root.Using a grater,cut the beet root into medium thin pieces.Use the blade for medium thin piece.
2.Cut the onion(only half is needed)into small pieces.
3.Take a pan, switch on the flame, add oil 2 Tb sp when the pan gets warm add the grated vegetables with little turmeric powder and salt.Add 1/4 cup water and cook it with a lid.Add 2-3 green chillies for some hot.
4.When all the water gets dried,stir the vegetables well,switch off the flame and allow it to cool for 10 minutes.
5.After cooling,add 1 cup of thick curd to the cooked vegetables.
6.Seasoned with mustard,dry red chillies and curry leaves.
7.Serve with rice especially Kerala matta rice.
